Paints and Thinners: a lesson in Chemistry?

I feel like an Airman Basic again for asking this, but I couldn't quite find what I was searching for out there. I'm not much of a chemist.

My questions are concerning paints:

1. Which type of paints are best used with which scenario? For example, Acrylics are best for general painting, enamels for detailing, oils for washes, etc. etc.

2. Thinning: What is the best chemical to use to thin (dilute and/or strip) each type of paint? Back when I was more adept at modelling, the only paints I would use were enamels, so naturally I would use standard enamel thinner (Is that white spirits?), and I don't know much about thinning Acrylics & Oils.

Any tips or hints would be greatly appreciated! If it makes any difference, my current genre of modelling has turned to WWII era Armor. :-)

I pretty much use enamels myself, so I'm going from memory here, not experience. I've read that for thinning acrylics, people use distilled water, windshield washer fluid, or isoprophyl alcohol, depending on the brand of paint.
