Since I build figures, I fix the figure (not glueing), then I paint the figures fleshparts and other parts. When the paint has dried I glue everything together.

Presumably, the armorfans are building on another way than this

On armor stuff, I like to build most of the kit I can. I usually leave of the small weapons and tank tools. Mostly every thing on a tank gets painted the tank color if it is not removed. I also like to do things in sub assemblies; turret, lower hull, tracks and road wheels, and last all the little stowage and weapons.

Ships and vehicles, I ususally build as much as I can and then paint. Aircraft, I paint the cockpit, then assemble, and then paint the exterior.

For AFV's I try to stick the this basic process
1. Build main assemblies - Hull (without wheels), Upper Deck, Turret
2. Build sub assemblies - Wheels, stoage, etc
3. I will paint details, engineering tools etc separatly
4. I will try to moch/dry assemble 1&2 and paint overall or camo scheme.
5. I assemble everything and then weather it.

Honestly each kit is unique and I don't follow this all the time. This is a loose guide.

Paint tires
Paint rims
Assemble wheels and set aside
Clean and paint any suspension parts
Do interior subassemblies painting where appropriate
Assemble interior
Do major subassemblies (Hull, tureet, frame) painting as needed
Add suspension (Tracked vehicle)
Combine subassemblies leaving off any spaced armor (schurtzen, ERA, Blazer or Toga, etc.)
Add wheels
Paint any camo pattern, including on spaced armor
Gloss the vehicle
Add decals
Paint and add the tools
Do a wash (thinned dark paint applied on crevasses, grill work, panel lines, and along sharp edges)
Dry brush (successively lighter shades of the base color applied from a brush whose paint has been mostly wipped away and then dragged lilghtly over the highponts of the vehicle)
Paint,assemble and weather the track
Add the track
Flat coat everything
Add the spaced armor
Paint, weather and add any stowage or crew
Flat coat again to blend in any shiny glue spots

I always paint the wheels and tracks their basic colors off the vehicle, then assemble the hull aand the turret. I paint them at the same time, but not assembled together. I consider decals part of painting. Then I will do final cementing on the suspension and tracks. After that, all that's left is accesories and weathering.

I build as many large sub assemblies as possible. For those parts requiring separate painting I have a bunch of plastic rod cut to legnth. after gluing the piece onto the rod I stick it into a styrofoam bed to get painted and dry. after I sparay the base coat I shade then give the vehicle a wash..lastly I drybrush and attach alll the small bits wheels and tracks. This is of course rather simplified but I guess it covers it.
