Given your comments in the figure forum I gather you are just looking for a lightish intro to this subject? In which case I would recommend these Osprey books...

take care with the Osprey book because I fonud some mistakes.
You can look 2 reports in www.lilliputmodel.com in articles " Cruces Rojas I" y " Cruces rojas II" about templar knigths.
