When I open a topic, the subject page always opens to the oldest post. Is there a way to set it so that it always opens to the latest Post?

Not that I know of. You can use the "reverse" button at the top (just under the tabs bar with "Home, News, Features...") to re-order that particular topic, but it reverts to oldest-first if you navigate away again.
