Hi guys, I would like some advice on the best glue to use when assembling glued parts. For example when you are assembling an engine and have already all the parts painted.

Welcome to the forums Nuno!
Most people will use some type of Cyano Acrylate (CA) glue for this purpose. Popular brands are Loctite, Bob Smith Industries (BSI) and Zap. It is available in various viscosities and curing times.
You can also use white glue (PVA) which is easier to clean up and remove parts if you get things wrong, but is not as strong and takes much longer to cure.
Best bet is to buy a couple of options and play around with some scrap pieces to see what works best for you.
