I do a variation of this by nuking the grounds dry before storage. Gives a nice smell to the kitchen too.
When I use them for ground cover, they are usually mixed with a little fine sand, some drywall tapers mud, and some acrylic burnt umber. This gives a nice winter frozen ground or deep forest winter floor effect. If the coffee grounds are still too coarse after drying,throw them back into the grinder and buzzz 'em up a little.
