I am looking for a Goliath Kit, blueprints, or anything that will help me scratch build this model. Any scale is fine even up to 1/1. Willing to purchase anything about this vehicle.

What Scale do you actually to work with ?
As far as I know for 1/35 th scale there once was a ESCI kit with German Pioneers including a Goliath available. Could be that DML / Dragon also had a kit with the Goliath, I am not too sure about that.
There are also a few Publications I know at least showing a few Pics and giving a brief description of the Goliath.

Well most Information of course is about the remote controlled tanks, way less is about the wire remote controlled Goliath, too bad for you but better then no info at all.

To all above mentioned Publications are no scale drawings to the Goliath. I'll check back wether I can find any more sources of Information for the Goliath.

In the WTS (Wehrtechnische Studiensammlung) [http://www.bwb.org/portal/a/bwb/ueberun/dasbwb/wehrtec] is a Goliath in the exhibition.
